 Classic Strawberry ‘Cheese’ Cake

 

*Enjoy a slice of this lovely, classic pie any time – without guilt!

 

‘Crust’

 

1 cup walnuts

1 cup pecans

1 ½ cup dates, pitted and chopped

pinch Celtic sea salt

 

*Place all of the ingredients above in your food processor (fitted with the S blade) and begin by pulsing. Continue to pulse until you get a fluffy, airy cookie-dough like texture. DO NOT OVER PROCESS. The mixture is ready if it forms a ball in your hand easily. Press the crust ingredients into your pie plate with your fingers or a fork. Set aside.

 

‘Cheese’ Filling

 

2 cups pine nuts (or cashews)

1 cup lemon juice (freshly pressed)

½ cup honey, RAW

½ cup melted coconut oil (place 3 to 4 heaping Tbsp of coconut oil/butter in a small bowl and then place that bowl in a larger bowl filled with boiling water ….it will melt in minutes)

pinch Celtic sea salt

1 tsp vanilla

water if necessary

 

*Place all of the ingredients above in your high-speed blender (liquids first and nuts last). Blend on high for a few minutes until very creamy and smooth. If you need to add water go ahead, but only add a little (1/4 cup at most). Putting the lemon juice in the blender first helps with the blending. Pour the filling into the pie crust and place the entire pie in your freezer for 1 to 2 hours before serving.

 

Strawberry Topping  

 

2 cups thawed, previously frozen strawberries

½ cup dates, pitted and chopped

pinch Celtic sea salt

1 tsp vanilla

 

*Blend all of the ingredients above in your high-speed blender. Make sure to thaw the berries well or they will not blend. Once the pie is fully frozen, pour the strawberry sauce over top and continue to freeze for 30 extra minutes. Then serve!

 

Storage: This pie keeps very well in the freezer. Single serving slices thaw in minutes. If you are serving the pie for a party, remove it from the freezer about 30 minutes in advance. Alternatively, the pie will keep for up to 3 days in your refrigerator. Enjoy this lovely raw vegan version of everyone’s favourite dessert any time!
