These cookies taste just like real gingerbread ... but are raw and vegan and surprisingly delicious!
Here's my recipe: ...
2 cups of walnuts
2 cups of chopped dates (very soft)
pinch Celtic sea salt
1 heaping tsp coconut oil
2 tsp ground cinnamon (or 3 if you really love them spicy)
2 tsp ground ginger (or 3 if you really love the flavour)
*Process the walnuts and salt in your food processor (fitted with the S blade) until well combined and light and fluffy.
*Add dates and process until well combined.
*Add the remaining ingredients and continue to process until the cookie dough is soft, sticky and pliable.
*Roll the dough out onto a flat surface to about 1 inch thickness. Now cut out gingerbread cookie men with a cookie shaper, or Christmas trees, or stars.
These cookies can be eaten immediately or refrigerated for a firmer texture.
