Oh Sweet Summer Corn!
Corn is funny because many people don't know that you can eat it raw. Corn is absolutely delicious raw! If you get your hands on some fresh sweet corn, you gotta try this lovely recipe ... get my version of raw vegan Cob Salad here ...
1 ear of raw corn, kernels removed
1/2 english cucumber, diced (skin on if organic)
1 avocado, pitted and diced
2 small to medium vine ripened tomatoes, diced
1 green onion, finely diced
a few sprigs of fresh parsley, roughly torn
2 Tbsp black olives, pitted and thinly sliced
*Combine all of the ingredients above in a large salad bowl and set aside.
a drizzle of cold-pressed extra virgin olive oil
the juice of 1 lemon
a healthy pinch of Celtic sea salt
a few dashes of dried herbs of choice (oregano, basil, etc.)
a few sprinkles of dried garlic powder
1 tsp Dijon mustard
1 Tbsp Braggs Aminos (all natural soy seasoning)
1 tsp raw, local honey
a dash of cayenne pepper (optional)
*Mix all of the ingredients above in a small bowl and stir well until the honey is completely dissolved. Pour over the salad and toss well before serving. Enjoy!
