All you'll need is 3 or 4 ingredients: dates, pecans, shredded coconut and coconut oil (if using)! That's it! Try it - you won't believe how easy and quick it is to make and how lovely and delicious it tastes!
Here's the recipe:
1 1/2 cups raw, pecans (plain, unsalted)
2 cups chopped, pitted dates (any variety - although I prefer 'honey dates' - although this variety has no honey in them)
*Place the above ingredients in your food processor (fitted with the S blade). Then, pulse to start off, making sure to scrape down the sides of the basin a couple of times. Next, process until you get a light and fluffy texture. The texture should be similar to 'cookie dough' and then you know to stop. Press the mixture into your pie plate to form a pie crust and set aside.
3 cups chopped, pitted dates (again, any variety but I like 'honey dates')
1/2 cup to 3/4 cup of water
1 Tbsp coconut oil (optional)
*Place the dates, 1/2 cup of water and coconut oil (if using) in your high-speed blender. Blend, using the plunger/stick tool until you achieve a super creamy texture. If your filling is lumpy or gritty, add a little more water (DO NOT ADD TOO MUCH WATER) and continue to blend. The filling should be thick and creamy like mashed potatoes. Pour the filling into your pie crust and garnish with pecans and shredded coconut. Refrigerate for a few hours or over night for best results. When the pie is ready, serve and enjoy!
