Sunflower Seed Hummus
3/4 cup raw plain sunflower seeds (if possible, soak the seeds in water for at least an hour)
1 Tbsp raw tahini butter
juice from 1 lemon, seeds removed
a drizzle or two of cold-pressed, extra virgin olive oil
a good pinch of Celtic sea salt
1 green onion, roughly chopped
a few dashes of your favourite dried herb (I use "Italian Mix" which includes oregano, basil, parsley, marjoram, etc.)
a few sprinkles of dried garlic powder (or 1 small garlic clove if you love bold garlic flavour)
a few splashes of water (keep adding water until you reach a smooth and creamy consistency - DON'T ADD TOO MUCH WATER OR YOUR HUMMUS WILL BE RUNNY)
* Blend all of the ingredients above in a mini-prep food processor or your Vitamix blender.
* As you add water, make sure not to add too much. You're looking for a creamy consistency, with some small lumps for added texture. But not runny or too thick. You may have to stop the food processor a few times to check for consistency.
*Before serving, test for seasoning. Enjoy as a spread for sandwiches, or with crackers or veggies as a dip.
