Put 1 large bunch of fresh basil leaves (no stems) in your food processor, fitted with the S-blade. Add about 2 cups of sundried tomatoes (or dehydrated tomatoes), that have been previously soaked in water for about 30 minutes. Add 2 spring/green onions, about 1 tsp of Celtic sea salt, 1 large clove of garlic and a drizzle of olive oil. Begin to pulse at first. Next, process the ingredients while adding a thin stream of olive oil from an opening at the spout. Continue in this manner until you achieve a thick, though slightly chunky sauce.
Serve this sauce over your favourite bowl of noodles! I like to serve it over zucchini noodles or cucumber noodles, but my husband and kids love it over raw kelp noodles or whole grain spelt noodles.
