Today I made this lovely Swiss Chard Summer Burrito. It reminds me of other 'wrap/burrito/taco/sandwich' concoctions I've made over the years, but to be honest, this was really an all time creative and yummy creation for me. The Swiss Chard leaf was so gigantic - as Chard summer leaves usually are - that it really played the role of the wrap/burrito exceptionally well.
If you happen to come across gigantic Swiss Chard leaves, you have to try making this lovely - and very quick and easy recipe!
Here's what you'll need ...

1 cup finely chopped cucumber, skin on
1 cup finely diced tomato, any variety
2 green/spring onions, finely diced
½ cup finely sliced red onion
drizzle of Dijon mustard
drizzle of hot sauce (optional – see recipe below)
2 Hass avocados, peeled, pitted and mashed
drizzle of olive oil
pinch Celtic sea salt
*For the WRAPS, simply cut out the rib down the centre of the large Swiss Chard leaf. This should leave you with two large green leaves which will work as your wraps.
*For the GUACAMOLE, simple mash the avocado in a shallow dish. Now drizzle with some olive oil and add a pinch of sea salt. Mash some more and set aside.
*For the HOT SAUCE, place 5 or 6 diced, red hot chilli peppers in a smaller blender (like the Baby Bullet or the Magic Bullet). Add a splash of apple cider vinegar, a drizzle of olive oil, a small pinch of Celtic sea salt, and a teaspoon of raw honey. Blend for a minute or so and there you have it – instant hot sauce that will last in your refrigerator for weeks (although we usually finish it in days)!
*For the ASSEMBLY, add a dollop of the mashed avocado (about ½ a cup) at the bottom end of the Swiss Chard leaf. Top with some cucumber, tomato, green onion, red onion, hot sauce and a drizzle of Dijon mustard (optional). Now, roll up the leaf carefully, tucking the ingredients in as you go along. Voila! A beautiful stuffed green wrap is only minutes away!
Don't every think that you have to spend hours making an overly complex raw food meal. This wrap took me minutes. And it really hit the spot after a hard workout at the gym.
