FOR THE 'STIR FRY' VEGGIES, here's what you'll need:
1 zucchini, peeled and finely chopped
1 carrot, peeled and finely chopped
1/2 yellow bell pepper, seeded and finely chopped
2 green/spring onions, chopped
fresh herbs for garnishing
splash of Braggs all natural soy sauce
dash garlic powder
dash cumin powder
sprinkle of cayenne pepper, optional
*Place all of the veggies in a medium size bowl. Add your seasonings and toppings and mix well. Taste and adjust for seasoning. Place the veggies over the rice, garnish with fresh herbs of choice (i.e.: freshly torn basil leaves, parsley or cilantro), a handful of cashews and serve!
