Here's what you'll need to make this fantastically delicious sandwich ...
2 large green/Asian cabbage leaves (collards will work, but cabbage is better)
a few slices of fresh tomato
a few slices of fresh cucumber
a few thinly sliced onions, preferably red (but white will also work)
a handful of fresh sprouts (alfalfa, clover, etc.) (shredded cabbage or lettuce will also work, but sprouts are better)
a few slices of truly raw Bubbies pickles
*Just mash a very ripe avocado with a fork, drizzle with some olive oil and add a pinch of salt. Voila. Simple guacamole never got so easy.
*This pumpkin seed spread really takes this raw sandwich to the next level. You gotta try it! Here's what you'll need:
1 cup raw, plain pumpkin seeds
a drizzle or two of high quality olive oil (first, cold-pressed, extra virgin)
a splash or two of water, or as needed
1 tsp Celtic/ Pink Himalayan sea salt
a dash or two of mixed dried herbs of choice
a few sprinkles of dried garlic powder
1 tsp of raw, cold-packed honey
1 heaping tsp of Dijon mustard
2 spring/green onions, diced
*Blend all of the ingredients above in your high-powered blender, adding only as much water as necessary to get a creamy, but thick consistency. Too much water will turn out a watery consistency. So easy on the water.
Here's how you assemble this hearty raw vegan sandwich:
1. Smear one leaf of cabbage with guacamole.
2. Layer some tomatoes, then cucumber and then onions on the guacamole.
3. Add a few slices of pickles and then a handful of sprouts/shredded lettuce over top.
4. Next, smear some pumpkin seed spread on the other leaf of cabbage. Now, smack this cabbage leaf over the other and there you have it, you're raw vegan sandwich. Cut down the middle to make two halves and serve.
