Wow! This one's a great one!
If you are raw vegan and wanting to eat something that's a little heartier or substantial (perhaps you've done an intense workout and are craving food higher in protein and fat, or maybe you're pregnant and dealing with "old" cravings, etc.), this recipe is for you! If you are not raw vegan but trying to transition towards a high raw plant diet, this can serve as a transitional meal.
Here it goes ...
Ingredients:
(makes 1 large patty/loaf)
1/3 cup sunflower seeds
1 carrot, peeled and chopped
1 rib of celery
1/4 cup chopped parsley
1/4 cup chopped sun dried tomatoes
1 green onion, chopped
a few dashes of garlic powder
a few dashes of mixed dried Italian herbs (basil, parsley, marjoram, rosemary, etc.)
a few splashes of Bragg's Aminos (alternative soy sauce)
a few dashes of paprika
*Place all of the above ingredients in a mini/prep food processor. Pulse a few times and then process until everything is fully combined. You may have to stop the machine a few times and scrape down the sides to get everything moving. The goal is to get it all combined without using any water.
*Taste the mixture to make sure it's to your liking for seasoning. If it's not savoury enough, add another splash of the Bragg's. You may want to add some cayenne pepper if you like your food spicy! Here's where you can get creative!
*Now, using your hands, press the mixture into a "patty-like" shape or mini "meatloaf" shape. You can also roll this mixture into small "meatballs".
*Place the patty/loaf onto your dehydrator sheet/tray. Dehydrate at super low (95 degrees is what I prefer), for an hour. You simply want to have a crusty exterior form, with a soft warm centre. An hour should be more than enough to achieve this.
Enjoy this lovely loaf with a tossed green salad. Yum!
