I absolutely love this recipe! The falafel are hearty, savory, moist and just yum! The tomatoes add the perfect acid and really balance the dish.
Here's how you do it ...
1 cup of raw, plain walnuts
1 large carrot, roughly chopped
1 Tbsp raisins, unsweetened
1/2 tsp Celtic sea salt
dash cumin powder
dash garlic powder
dash dried oregano
handful fresh parsley
*Place all of the ingredients above in a food processor (fitted with the S blade). Process these ingredients until well combined. Form into little balls and set aside.
*Next, grind 2 Tbsp of flaxseed, using a mill/small food processor, into a fine powder. Add 1 Tbsp of nutritional yeast, a dash of dried oregano and a dash of garlic powder to the flaxseed. Mix well. This is your 'breading' for the falafel.
*Now, roll the falafel in the 'breading'. Set aside.
*For the tomato salsa, dice 1 large vine-ripened tomato and place in a small mixing bowl. Add a sprinkle of salt, a drizzle of olive oil and a drizzle of red wine vinegar. Add a dash of oregano and toss well. Set aside.
*For the assembly, wash 3 large romaine lettuce leaves, dry thoroughly and place on your serving dish. Top each lettuce leaf with 2 falafel. Top with the salsa and serve. Yum!
There are a few steps to this recipe, but don't be daunted. It really takes only a few minutes and it's super easy. Also, the payoff is great - super yummy raw vegan food that's good for you. Your kids will love this one too!
