| My raw vegan chocolate pudding WILL satisfy any chocolate lover's craving for the real deal, minus the sugar, dairy, cholesterol and guilt that usually comes along with eating something not so good for you. |
Ingredients:
1 lb raw coconut meat, thawed from frozen or fresh
2 heaping tablespoons raw carob powder (more if you desire)
pinch Celtic sea salt
pinch raw vanilla powder
6 to 8 large really soft Medjool dates, pitted
a few splashes of water (no more than 1/4 cup)
4 ice cubes
Place the coconut meat, carob powder, dates, salt and vanilla in your VitaMix blender. Begin to blend on high for a minute or so. Next, using your plunger tool, mix your ingredients around to make sure everything gets blended up good.
Add a few ice cubes and a splash or two of water to really get it all whipped up good. Blend again. I like adding ice cubes because it allows for a lighter or more airy texture. Just make sure to blend your ingredients well and stop a few times to scrape down the sides and to taste your pudding for smoothness.
When your pudding is smooth and creamy to the eye, you're done!
Serve and enjoy with your favourite topping. We love shredded coconut or fresh berries.
