When you want something hearty ... this 'meat' loaf really hits the spot!
Here's how to make this quick and easy 'meat' loaf ...
1 cup walnuts
1 medium carrot, chopped
1 green onion, chopped
1 handful fresh cilantro (or other herb)
1/2 tsp Celtic sea salt
dash dried mixed Italian herbs (or your favourite dried herb)
a few dashes of cumin powder
a few dashes of garlic powder (or fresh garlic if you really love garlic!)
a few dashes of paprika powder
*Process the walnuts in your food processor (fitted with the S blade) just until light and fluffy. Do not over process the walnuts! This step should only take seconds.
*Add the remaining ingredients and pulse. Then process until the ingredients are well combined. The mixture should hold together when you press it into your palm.
*Press the 'meat' loaf batter into 2 small sized patties and either serve immediately or dehydrate for 30 minutes up to a few hours (depending on your preference). Either way its delicious.
*I like to eat my raw vegan 'meat' loaf on a bed of greens, topped with a variety of chopped veggies and garnished with fresh herbs and chopped chillies. You can also drizzle your favourite dressing or sauce over it.
