This mayo really rocks ... !!!

1 cup raw pine nuts
1 green onion/scallion
juice of 1 lemon
a few dashes of garlic powder
a few dashes of mixed dried Italian herbs (oregano, marjoram, basil, parsley, rosemary)
1 tsp Celtic sea salt
*olive oil as needed (no more than 1/4 cup)
1/4 cup of water (or more as needed)
1. Place the nuts, onion, lemon juice, herbs, spices and salt in your VitaMix blender. Add a 1/4 cup of spring/filtered water. Now blend on high for about 30 seconds.
2. You'll notice that the mixture is a little on the thick side and starts to climb up the sides of your blender. Stop blending and begin adding, in a steady stream from the opening at the top of your blender, a few drizzles of olive oil. You'll want to start blending now, as you pour in the olive oil in a steady stream. I've never measured how much olive oil to add, just add enough (a few drizzles) until the mixture becomes super smooth and creamy. I think you won't be adding more than a 1/4 cup of olive oi.
3. Done. Taste for seasoning and enjoy. (For best results, use a mild tasting olive oil. Refrigerate the mayo for at least 30 minutes before using.)
Enjoy this lovely raw vegan version of mayo on your favourite sandwich or as a dip.
