The taste and texture of this lovely brownie is to 'live' for ... and you won't believe how easy it is to make.
(makes 9 small brownies or 6 large)
1 cup raw, plain walnuts
1 cup shredded dehydrated coconut
pinch Celtic sea salt
a few dashes of cinnamon
1/3 cup wild-crafted, raw carob powder
2 cups of chopped, pitted dates (I like to use Medjool)
*Process the walnuts, coconut, sea salt and cinnamon in your food processor fitted with the S-blade for a couple of minutes. Do not over process! You'll want the walnuts and coconut to be light and fluffy (not stiff like candy).
*Then add the carob powder and process for a minute or so more. Again, do not over process!
*Next, add the dates and process until well combined. This time you'll want to process for at least a few minutes. Stop when the ingredients start to clump together and the natural oils in the coconut and walnuts begin to release.
*Now, dump the ingredients onto a flat surface. With your hands, kneed the ingredients together to form a uniform ball. Flatten the ball out and then, using a rolling pin, roll the ball out to about 2" thickness. You should have a large square or block shape.
*Cut the block into 9 even smaller squares or larger rectangles to form your brownies. That's it. Done.
*Serve immediately or pack for snacks and lunches. These brownies will keep for up to a week refrigerated.
