This raw food recipe is one you and your kids will love! It actually came about by total accident. I like to eat kelp noodles (noodles made of raw kelp seaweed only) when I'm craving pasta or chinese food. They really have that truly 'noodle' feel - but they are totally raw, vegan and gluten-free! One day when I was eating them, my kids came over and started eyeing me. And then started the questions - "What are you eating mommy?" ... "What is that?" ... "Can we have some?" They were so curious about what mommy was eating - which is usually always the case. I gave them a taste ... and the rest is history.
Now, this is one of my most popular go-to kid meals!
Here's what you'll need ...
1/2 cup almonds, pre-soaked in spring/filtered water for 30 minutes or more
2 packs/bags of kelp noodles, rinsed under cold water (found at your local health food store)
handful of fresh cilantro leaves, torn into bite-sized pieces
handful cherry tomatoes
1 spring/green onion, finely chopped
1 large carrot, cut into ribbons with a vegetable peeler
*Prepare all of the ingredients above, as indicated, and place in a medium to large mixing bowl. Set aside.
2 heaping Tbsps tahini butter (raw sesame seed paste – almond butter works just as good)
3 Tbsp Braggs, all natural soy sauce
1 heaping Tbsp honey, RAW
dash of garlic powder
dash of cumin powder
splash of apple cider vinegar
splash of water
*Place all of the dressing ingredients in a small blender (or hand-held blender) and blend on high for a minute or so until the ingredients are emulsified. This dressing should be rather thick. Pour the dressing over the noodle bowl ingredients and toss well (I like to use my hands to ensure that the dressing gets on each and every noodle).
Don't forget to serve these noodles in bright coloured bowls and get your kids to use chop sticks. They'll love it! ... it'll get them eating too.
