You really can have your cake and eat it too ... on the raw food diet!
- a whole whack of ripe, frozen bananas, cut into bite size pieces
- whatever toppings you fancy (healthy of course)
Here's how to do it:
Using your high-powered VitaMix blender (or the Blendtec), blend up the frozen banana pieces using the 'plunger' tool (which will help with getting the frozen bananas all whipped up)! You'll have to really dig the plunger in and around to get the bananas properly whipped. You'll know its done when the bananas resemble conventional soft serve ice cream.
Now, simply pile the banana 'ice cream' in between a fresh, ripe banana and top with your favourite raw food goodies. I like to use fresh berries, walnuts or pecans, cacao nibs, dried coconut, a drizzle of agave nectar, goji berries, a sprinkle of cacoa/carob powder, etc. Use your imagination and make your banana split sing!
