Fresh, Light and Bright - Just Feel It!
It's true what they say - you are what you eat. I like feeling light and bright - so I eat food that is light and bright. This lovely noodle bowl is made with the loveliest of plant foods that will leave you feeling satisfied yet energized and all around amazing. Zucchini and carrot ribbons meet "meaty" avocado and hearty soaked almonds ... you just gotta give it a try!
Here's my recipe ...
Here's just one of the many ways I approach it:
1 small zucchini, cut into ribbons with a carrot peeler
1 medium carrot, cut into ribbons with a carrot peeler
half a sweet yellow bell pepper, cut into thin strips
1 large red radish, cut into thin little discs
1 spring/green onion, finely chopped
1 handful of truly raw almonds, pre-soaked for at least 30 minutes (or as is if that's all you got)
1/2 a Hass avocado, pitted and roughly sliced
drizzle of cold-pressed, extra virgin olive oil
drizzle of lemon/lime juice
drizzle of Braggs soy sauce
a few pinches of dried mixed herbs
a few dashes of dried garlic powder
a dash or two of cayenne pepper
1. Place all of your veggie ribbons in a medium sized mixing bowl. Add the radish, most of the green onion, bell pepper and half of the almonds. Next add the olive oil, the lemon/lime juice, the Braggs soy sauce and the herbs and spices. Toss well.
2. Now taste for seasoning. Adjust if you need more of this or that. Toss again.
3. Now plate your veggie noodles in a lovely noodle bowl. Top with the remaining almonds and the avocado. Sprinkle a tiny bit of Celtic sea salt over the avocado and the remaining green onion. Serve immediately. Enjoy.
