Try them ... you'll love them ...
1 cup walnuts
1/2 cup hempseed (and a little extra for sprinkling)
1/4 cup flaxseed
1 Tbsp coconut butter/oil
pinch Celtic sea salt
1 cup dates, pitted (plus 1/4 cup extra)
splash of water
Place the walnuts, hempseed, flaxseed, coconut butter/oil, sea salt and cinnamon in your food processor (fitted with the S blade) and begin to pulse. Continue to pulse the ingredients until they are well combined. Add 1/4 cup of dates and continue to process just until the ingredients stick together (but remain light and fluffy). Press this batter onto a flat surface and shape into a square about 1/2 an inch thick.
Next, blend the remaining dates with a splash of water in your food processor (once rinsed clean) until you achieve a thick paste. Spread this date paste over the walnut square about 1/2 an inch thick. Sprinkle some hempseed over top the square and then cut the square into 4 smaller squares. Refrigerate for about an hour before serving.
Variation: Substitute 1 cup of dried/shredded raw organic coconut in the place of the hempseed and flaxseed and you've got a lovely coconut date square that is to die for!
