The holiday season is on its way ... and I can't wait!
Above is my family's favourite raw cookie recipe. And not many ingredients go into this lovely cookie, just: cashews, dates and coconut. Nothing else! It's so simple to make this show stopper of a cookie!
Here's my cookie recipe, from our family to yours!
Here's what you'll need:
2 cups cashews (raw, plain)
1 1/2 cups dates, (unsweetened, pitted)
a healthy pinch of Celtic/Pink sea salt, 1 Tbsp of virgin, coconut butter/oil and 1 cup of dried shredded coconut flakes.
Here's what to do:
Place the cashews, salt and dried coconut in your food processor (fitted with the S blade) and process until you get a crumbly texture, similar to course flour. Next, add the dates and coconut butter and continue to process until the dough forms a ball. Then, roll a small amount into a ball in the palms of your hands. Then press into the cookie with a fork. Voila! You're done. It only takes minutes, and you get a lovely cookie that not only tastes amazing but impresses too!
