This nut-free energy bar is a great lunch packer or post-workout recovery snack ... you won't want to miss!
Today, I created a lovely raw vegan NUT-FREE energy bar that is truly delicious! My kids can't get enough of these lil' gems and neither can I (I use them for post-workout recovery ...).
Here's my recipe ...
Coconut Goji Berry Energy Bars
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1 cup shredded, dried coconut
1 cup chopped dates, any variety
1 cup unsweetened raisins (I like Thompson)
1/3 cup dried goji berries (buy the plump, soft ones)
a few dashes of cinnamon
a pinch high quality sea salt (I like Celtic)
*Process the pumpkin seeds, sunflower seeds, sea salt, cinnamon and coconut in your food processor (fitted with the S blade) until the ingredients are granular or like a course 'flour'. Add the raisins and dates and continue to process until the ingredients start to stick together. Now add the goji berries and process for a minute or so more until well combined. You should have something that resembles a cookie dough.
*Dump the 'cookie dough' onto a flat surface and kneed together with your hands. You'll want to gather up all the crumbs until you have a sticky mass. Now, using a rolling pin, roll the cookie dough out flat to about 1/2" thickness and cut into even squares or rectangles. Now wrap individually and store in your refrigerator for up to a week.
*Voila, instant energy bars!
