My husband adores pudding, period! I have been trying to come up with a "healthy" pudding recipe for years. Recently I came up with this lovely coconut pudding. And it is truly amazing - healthy and delicious all rolled into one. I've made it in peach, pineapple and mango flavour.
Below I demonstrate just how easy it is to make this raw dessert/snack food!
Coconut Pudding (Pineapple/Mango/Peach
1lb fresh/frozen Young Thai coconut meat
2 cups fresh, perfectly ripened pineapple, mango or peach slices
1 heaping Tbsp raw honey
pinch Celtic sea salt
1/2 tsp raw, pure vanilla
(If you are using frozen coconut meat, make sure to partially thaw the coconut first before blending.)
Blend all of the ingredients above in your high-speed blender (i.e.: VitaMix, Blendtec or Omega), on high for a minute or so. Stop when the ingredients become a smooth and creamy consistency. Pour the pudding into separate ramekins/cups and refrigerate for at least 30 minutes before serving (the longer you refrigerate them the better the consistency resembles 'real' pudding).
