Green like grass .... but tastes nothing like it!
This PESTO SAUCE will knock your socks off!
Here's what you'll need for this oh so simple, but DELICIOUS cilantro arugula pesto sauce:
1 large handful of fresh cilantro leaves
2 larges bunches of baby arugula leaves
1 large clove of garlic
1 cup of raw, plain cashew nuts
1 tsp Celtic sea salt (or high quality salt)
high quality, cold-pressed, virgin olive oil as needed
***Place all of the ingredients above in your food processor (fitted with the S blade), except the olive oil. If it seems like a lot, don't fret, just squish all the leaves in. Begin to process the ingredients, slowly adding olive oil in a thin stream from an opening at the top of your processor. Continue adding olive oil until you reach a creamy consistency as shown in the image above. This will keep in your fridge for days.
That's it! ... now pour on the sauce! I especially love pesto sauce over linguini zucchini noodles as shown in the image above. I simply use a carrot peeler and make wide noodle pasta by simply shaving the zucchini flesh.
