One of my favourite ways to eat 'in the raw', is rolling or wrapping up a bunch of veggies (and other yummy raw stuff) into a burrito, taco or wrap. I just love eating with my hands I guess. It's just so different from eating a salad and so ooey, gooey and good! The filling drips out of the sides/ends ... and it makes a yummy mess!
Today I made this lovely Swiss Chard Summer Burrito. It reminds me of other 'wrap/burrito/taco/sandwich' concoctions I've made over the years, but to be honest, this was really an all time creative and yummy creation for me. The Swiss Chard leaf was so gigantic - as Chard summer leaves usually are - that it really played the role of the wrap/burrito exceptionally well. If you happen to come across gigantic Swiss Chard leaves, you have to try making this lovely - and very quick and easy recipe! Here's what you'll need ... ![]() Get ready for a gluten-free, grain-free, vegan and raw 'noodle' recipe to die for! I make many versions of this recipe. It is a favourite of mine and definitely a go-to recipe for me. I have this at least once a week if not more! Basically, a variety of colourful veggies cut into ribbons make the noodles in this dish. Then I top the dish with herbs, nuts and other great stuff. I use a variety of seasonings and the sauce will also vary depending on the ingredients I have on hand. Check out my video demonstration above to get a sense of how to make this lovely raw vegan Asian Thai noodle bowl. This is truly an ingenious snack for kids (and adults too). The salty celery, combined with the creamy nut butter and the sweetness of the dates, makes for the perfect snack.

My kids and I paid a visit to the library today. They spent the entire afternoon making battle ships out of paper. They were so INSPIRED by this craft that they have been playing 'pirates and ships' for hours! I thought ... why not use this experience as INSPIRATION for a neat and FUN - and highly energizing and nutritious - afternoon snack. After only minutes of preparation, here you have it, battle ships made out of BANANAS & NUTS!! ... and needless to say, it was a HIT with all my little ones! RAW VEGAN Rice N' Veggies - Gluten free, vegan, raw and grain free ... never got better! This dish is amazing! Sometimes salads get a little boring and you just want something heartier that gives you that feeling of satiation. For me, this recipe does exactly that! Cauliflower and cashews stand in the place of rice and they do a pretty good job of it.
Try it here ... This dip/spread is absolutely sublime! As sour as it needs to be, creamy and delicious - a must try! Not only is it tasty, but good for you. Cashews are high in "heart-friendly" monounsaturated fatty acids that help to lower bad LDL cholesterol and increase good HDL cholesterol! They are also very rich in minerals, including: manganese, potassium, copper, iron, magnesium, zinc and selenium. In fact, a handful of these nuts daily would prevent deficiencies in these minerals. This is one of those recipes that you needn't introduce as "raw" because no one will know the difference. Serve veggies and this dip at your next dinner party for an appetizer. It is a guaranteed hit! Or, spread some on whole grain ezekiel bread, add some lettuce, tomato, avocado, a pinch of salt and a pile of sprouts.
