You gotta try it ... raw, vegan and so sublime. Here's my recipe ...
3 or 4 vine ripened tomatoes (very ripe)
1 Hass avocado (very ripe)
mixed dried Italian herbs, i.e.: oregano, basil, parsley, marjoram, etc., as needed
Celtic sea salt or any high quality salt, as needed
cold-pressed, extra virgin olive oil, a few drizzles
torn fresh basil, a few leaves
*Slice the tomatoes and avocado thinly, and fan on a serving dish.
*Drizzle with olive oil, liberally. Then sprinkle with the dried herbs and the sea salt. Garnish with the fresh basil leaves. Optional: drizzle with some lemon juice if the dish is meant to stand for a while at a party (the lemon will keep the avocado green).
That's it! So simple, yet so perfect.
