I make many versions of this recipe. It is a favourite of mine and definitely a go-to recipe for me. I have this at least once a week if not more!
Basically, a variety of colourful veggies cut into ribbons make the noodles in this dish. Then I top the dish with herbs, nuts and other great stuff. I use a variety of seasonings and the sauce will also vary depending on the ingredients I have on hand.
